- 3 large green plantains (or however many you want, really, let's be honest...)
- 2 teaspoons salt, or to taste
- 3 cups cold water
- vegetable oil
Directions:
- Peel the plantains (I learned this can stain your clothing; so don't let the moisture in the peel touch your clothes); then slice them into 1" diagonal pieces.
- Mix the water and salt and soak the slices in the salt mixture in the fridge for at least 30 minutes (or all AM while you are out proselyting).
- Drain and pat dry with a paper towel (or napkin, or rag, whatever)
- Fry on both sides in 1/2" of medium-high hot oil for 2 minutes, or until they turn slightly bright yellow in color.
- Remove the slices from teh pan and place on paper towels. Press each one down softly until somewhat flattened (use a plate, cup, bottom of a heavy jar, or a platano masher if you have one).
- Fry the pressed slices again until they turn a light golden color and are crispy (about 5 minutes or so).
- Serve immediately.

- May 17, 2010: Thanks! I´ll give this a try! I´ve never thought of soaking them in salt water before. I´ve only made tostones once or twice. One thing that turned out well was to bread them with some of my pancake batter. I´ll let you know how they turn out!
